a perfect in 21/2 minutes! omelette FOOD FACTS 1. (Quantities for 2 people.) Two level tablespoons dried eggs, salt and pepper, 4 tablespoons water, 1/2 oz. cooking fat. Add salt and pepper to the eggs, then half the water, and mix to a smooth paste. (Remem- ber, don't mix dried eggs with water until you are ready to use them.) 2. When all lumps have disappeared, add the rest of the water gradually, keeping the mixture absolutely smooth. (In dried eggs white and yolk are blended together so that if you reconstitute them properly, you are able to get exactly the same even mixture every time.
