Did you know that an egg is 75% water

1 Jan 1943

You are allowed one packed of dried eggs per ration book every 4 weeks AN EGG IS DO YOU KNOW THAT 3/4 WATER? When we say "as full of meat as an egg," we speak truly, for eggs are a protein food, the very same kind of food as meat. Even so, eggs aren't actually full of "meat." In fact, three-quarters of a hen's egg is water! And dried eggs are simply new-laid eggs with only the water and shell removed. They have exactly the same food value as shell eggs—none of the goodness is lost in drying. Children, who need protein even more than grown-ups do, should have egg dishes often! Serve an omelette as a main dish once a week—it's actually easier and quicker to make with dried eggs than with shell eggs.
