These fillets — solid chunks of nourishment — are as fresh as when they left the icy waters of the finest cod fisheries in the world. They are easy to prepare, and (being boneless and very digestible) are ideal for the children's dinner. The best way to cook them is to steam, fry or bake them, and the firm flakes of the cooked fish make excellent fish salads, fish cakes, fish ###es, and kedgerees. How to thaw FROZEN COD FILLETS If the fillets are still frozen-hard when you get them home from the fishmonger, allow them to stand for an hour or two in a moderately warm atmosphere.
