To avoid wasting even the tiniest bit of cheese, keep it in good condition by wrapping in a mar- garine or butter paper, and hanging in a piece of muslin in a cool airy place. This prevents mould, hardens the cheese and makes it more economical to use. Cooking Cheese. It is better to cook cheese at a fairly low heat or it may become tough and stringy; but if your recipe requires fierce heat, cook the cheese for only a very short time.
