It's quite easy to make — thanks to dried eggs—and a delightful change from the usual pies and tarts. It's important to remember that you make the custard for this recipe with boiling milk, and then pour the custard hot into the pastry-lined tin. First line your tin with pastry. Then for the custard you need: 3 or 4 reconstituted dried eggs; 1 level tablespoon sugar; 1 pint of boiling milk or milk and water; and a few drops of almond essence.
