Anyone can make delicious omelettes with dried eggs by following these directions carefully: Allow 4 or 5 level tablespoons dried eggs for two people. Recon- stitute the eggs, and here's the best way to do this: Measure the dried eggs very carefully — one level tablespoonful to two tablespoonfuls of water. A heaped tablespoon gives you far too much dried egg for the amount of water and results in a "leathery" omelette.
