It looks and tastes twice as attractive as a plain baked potato, and is very little trouble to prepare. Stuffed Potatoes Well wash 4 large potatoes and bake in their jackets until soft. Cut in two lengthwise, scoop out the centres and mix with an equal amount of cooked mashed carrot, seasoned to taste, and 4 teaspoonfuls of chopped parsley. If a tablespoonful of margarine or a couple of tablespoonfuls of grated cheese can be spared, mix in also.
