266 FOOD FACTS Hints for the HOUSEHOLD HARVEST THE DRYING OF HERBS YOUR herbs should have been harvested in July but there is still time to dry and store the second crop for winter use. Small leaved herbs such as thyme and sage should be washed, tied in bundles, protected from dust with a piece of muslin, and hung to dry near a fire. Large leaved herbs such as bay leaves should be picked from the stacks, and any shrivelled ones discarded. The leaves should then be tied in muslin, dipped in boiling water, removed, and the superfluous water shaken off.
