Fadge for four!

1 Jan 1943

Fadge for Four! POTATO PLAN, PART 5: Potatoes in place of flour Give the family plenty of these potato cakes —they'll love them! It's an old Irish custom—making Fadge. Why don't we do it oftener here? These potato cakes are delicious, and ridiculously easy to make! Try them for breakfast or tea. FADGE Mash 2 lbs. of boiled potatoes while still hot. Allow to become quite cold. Add salt and work in enough flour to make a pliable dough. Knead and roll out about 1/4 inch thick. Cut into wedge-shaped pieces and cook on a greased hot plate or frying-pan, on both sides, till brown.
