It yields about 51/2 lbs. of marmalade. Wash 11/4 lbs. Seville oranges and squeeze out the juice. Collect all the pips into a muslin bag. Cut up the peel fairly coarsely and place it, with the juice and bag of pips, in a basin. Cover with 2 pints of water and leave overnight. Next morning, simmer gently until the peel is quite tender and the weight of pulp is 21/2 lbs.
