Drying is the best method for peas and broad beans; salting is the best method for runner and French beans. Think how your family will enjoy these summer vegetables on a winter's day! Here is how to do it: DRYING Begin by dropping the peas or broad beans (shelled) into boiling water; boil for two or three minutes, drain. This improves the colour. Next, if you have time, "pop" the skins off; the peas or beans then fall into halves and dry more quickly.
