Scotch Eggs—new style Tasty, nourishing, and easy to make with dried eggs Just one of the many tempting dishes you can make with dried eggs — that old favourite, Scotch Eggs! Make hard-boiled eggs by reconstituting the dried eggs and pouring into a greased egg-cup or mould — one egg to a mould. Then steam in a pan of simmering (not boiling) water for 10 or 15 minutes until it sets. Turn out of the mould by slipping a knife round the edge. Hard-boiled eggs This gives you excellent hard-boiled eggs, for dried eggs are shell eggs — new-laid ones — with only shell and water removed, and they have exactly the same nutritional value as shell eggs.
