Most of the goodness of the cabbage gets boiled away when you cook it in large chunks for half an hour or more When you shred the cabbage first, this allows you to cook it quickly—thus retaining its fine flavour and natural colour, as well as its Vitamin C ...then cook it this way First of all cut the cabbage in quarters, discarding the outer leaves and saving these for soups and stews. Then shred the quar- tered cabbage across from the tip, with a sharp knife, as shown in the picture above. The shreds should be about hall' an inch wide.
