FOOD FACTS Delight the family with HERRING PIE HERRING PIE (For 4) 4 herrings, boned; 2 medium onions, sliced; 2 medium potatoes, thinly sliced; 1/4 oz. dripping; 1/4 pint stock; season to taste; 1 small apple, chopped; pinch of thyme, if available; pastry using 4-6 oz. flour. Cut herrings into 4; place half in greased pie dish. Fry onion and potato lightly in dripping, add liquid and seasoning. Bring to boil. Pour half this mixture over herrings in dish; add half the apple. Repeat with another layer of herring, vegetable, and apple.
