2 oz. pearl barley, 2 level table- spoons sugar, 1 pint milk (fresh or diluted tinned milk), 1/2 oz. mar- garine, nutmeg. Mix the barley, sugar and milk and leave to soak overnight. Place in a pie-dish with the margarine and grate nutmeg over top. Bake in a slow oven for 21/2 hours. Pearl barley pud- ding should have the same sort of slow cooking as a rice pudding. Hot Chocolate Flan spoon cocoa, 2 level tablespoons 1/2 pint milk. tin with it. Beat egg, cocoa, sugar and essence together. Heat milk and when boiling, pour onto egg mixture gradually, pastry case and bake in a moderate oven till set (about 40 minutes).
