Fish Trades Gazette, October 4, 1941 MINISTRY OF FOOD FRESH-SALTED COD The Ministry of Food has made large purchases of fresh-salted cod from Iceland. Considerable supplies of this fish are now in the country and the necessary washing and pressing is being carried out by the salt fish curers. So far as the British public are concerned, this fish is practically an unknown article. It is first quality cod which has been preserved by salting. It is most economical to use and there is little waste. The fish is headless and has been split open and most of the backbone removed.
